Asparagus Feta Salad

Ingredients
250g | asparagus |
10 | cherry tomatoes |
200g | white cheese |
60-80g | rucola |
2 tbspn. | oil |
1/2 tsp. | salt |
Preparation

Wash the asparagus. Peel the bottom third and cut off the woody ends. Place the asparagus in an ovenproof dish and sprinkle with about 2 tbsp oil and half a teaspoon of salt.

Place the casserole dish in a preheated oven at 200°C top/bottom heat for approx. 15 minutes.

Cut each piece of asparagus diagonally 4 times. Quarter the tomatoes and cut the white cheese into small cubes.

Place everything in a bowl with the asparagus and mix together. Spread the rocket on a large plate. Top with the tomato and asparagus mixture.
Tip:
If you like, sprinkle chopped walnuts over the salad.
