Warm broccoli salad with cherry tomatoes and fruity cranberries on creamy whey cheese
Ingredients
175g | whey cheese |
2-3 tbspn. | cream yogurt |
1 | broccoli |
100g | cherry tomatoes |
sth. | olive oil |
1 | Charlotte, diced small |
1 tbspn. | grainy mustard |
2-3 tbspn. | lemon juice |
sth. | salt, pepper |
sth. | hazelnuts |
sth. | Dried cranberries |
Preparation

To make the dressing, place the mustard in a bowl and mix with 1-2 tbsp lemon juice. Add the olive oil, shallots, salt and pepper and stir to combine.

Mix the whey cheese with a little salt, pepper, olive oil, lemon juice and a little lemon zest, add the cream and yoghurt and stir to form a cream.

Cook the broccoli with a little water and salt for approx. 6-7 minutes. Be careful not to overcook. Add the cherry tomatoes and cook for a further 1-2 minutes

Spread the cream on a plate. Arrange the broccoli florets on top, place the cherry tomatoes in the spaces and garnish with the dressing. Top with hazelnuts and cranberries and you have a deliciously light starter.
