Bulgur Rice

Bulgur rice with vegetables (pointed pepper and tomato)
Bulgur rice is a classic side dish in Central Anatolia. It is prepared like Turkish pilaf rice. You can quickly conjure up a healthy and delicious side dish with vegetables such as onions, tomatoes and peppers. This is traditionally served with yoghurt.
Ingredients
1-2 tbsp | butter (or oil) |
1 onion | onion, finely diced |
2 | green pointed peppers, finely diced |
1 tsp | Salça (tomato puree and/or red pepper paste) |
1 | aromatic beef tomato, skinned and diced |
1 glass | coarse bulgur wheat |
1½ glasses | of hot water |
1 tsp | salt |
½ tsp | freshly ground pepper |
some | chives, parsley or tomatoes, finely chopped |
Preparation
Melt butter in a coated, shallow pot. Sauté diced onions and peppers slowly until they get a slight color. Add bulgur and toast for a few minutes. Add tomato paste and shortly after, add the diced tomatoes, let it simmer for another 2-3 minutes with occasional stirring.
Pour hot water over the vegetables and season with salt and pepper. Bring to a brief boil and cover, letting it simmer over low heat for about 18-20 minutes until the bulgur is tender. Stir once, adjust seasoning if needed, and let it rest for 5-10 minutes. Garnish with chopped chives, parsley, or tomato cubes, and serve with delicious yogurt.
