Cheesecake Bites

Visually appealing and a great treat for all cheesecake lovers.
These bites are delicious, bite-sized treats perfect for special occasions or as a sweet indulgence in between.
Ingredients
130 g | butter cookies |
60 g | butter, melted |
400 g | cream cheese |
100 ml | cream |
100 g | sugar |
2 | eggs |
2 tbsp | starch |
4 tbsp | lemon zest |
1 tsp | vanilla extract |

sth. | chopped pistachios |
Preparation
Preheat the oven to 160°C top/bottom heat. For the base, crush the butter cookies in a blender and then transfer to a bowl.
Add the melted butter and mix well. Pour the cookie mixture into a baking tin and press down. Place the baking tin in the fridge.
For the filling, mix the cream cheese, sugar, vanilla extract and lemon zest until it is creamy. Add the eggs and stir in. Finally, add the cream and cornflour and stir in briefly. Pour the mixture into the baking tin and bake in the preheated oven for 30 minutes. (Tip: Place an ovenproof bowl of water in the oven to prevent the cheesecake from cracking on the surface later.)
After the baking time, insert a wooden spoon between the oven door and leave the cheesecake to rest for 20 minutes. Place the cheesecake in the fridge for at least 5 hours. After the cooling time, cut the cheesecake into small square pieces.
Decorate the cheesecake bites with chopped pistachios and dried fruit.
