Chickpea Wrap

Soak the chickpeas in water for a few hours and then cook until they are soft. Pour away the water and mash the soft chickpeas with a fork.

Heat the olive oil in a pan and fry the tomato purée. Add the mashed chickpeas and stir well. Add the spices and stir in. Then remove from the heat and set aside.

Peel and halve the onion and cut into thin slices. Roughly chop the parsley. Place both in a small bowl and mix with the juice of half a lemon and a little olive oil.

Take one wheat flatbread, fill with the chickpea mixture and salad and carefully roll into a wrap. Then cut in half, arrange and enjoy.
