Eggplant Rolls
Ingredients
2-3 | medium-sized eggplants |
250g | creamcheese |
50g | walnuts |
1 tbsp | chopped parsley |
1-2 | garlic cloves |
sth. | salt |
sth. | plant-based oil |
Preparation

Wash the eggplants and slice them into thin strips.

Roast the eggplant strips in a pan or toaster with a little vegetable oil until they are lightly browned and soft.

In a bowl, mix the cream cheese, chopped walnuts, parsley, garlic, and a pinch of salt until you have a creamy mixture.

Place a teaspoon of the cream cheese mixture onto an eggplant strip and carefully roll it up.

Arrange the rolls on a plate and garnish with additional parsley if desired.
