Green lentil stew with vegan sucuk.
Ingredients
1 jar | Green lentils |
1 | Onion |
1 | Potato |
1 | Carrot |
1 | Large tomato |
1/2 pack | vegan sucuk |
sth. | Coriander leaves |
sth. | Coconut Cream |
sth. | Olive Oil |
sth. | Salt, Pepper, Oregano |
Preparation

Soak the lentils in lukewarm water.

Cut the onion, potato, carrot and tomato into small cubes. Cut the vegan sucuk into slices.

Heat the olive oil in a pan over a high heat, sauté the onion with a little salt. Add the potato and carrots and continue to sauté for about 3 minutes. Add the tomatoes, add the drained lentils and sauté briefly. Flavour with pepper and oregano.

Add boiling water so that the vegetables are covered. Cook over a low/medium heat until the lentils are cooked. Check the water level occasionally.

Fry the vegan sucuk with a little olive oil and add to the cooked lentil vegetables.

Arrange on a plate and garnish with fresh coriander and a dollop of coconut cream.
