Preparation
Bring the water, sugar and lemon juice to the boil in a small pan, optionally add a little rose water and simmer for approx. 10 mins.
or the pudding, put the starch and sugar in a saucepan and mix with a whisk. Add the milk and water, mix well and bring to the boil over a high heat, stirring constantly. Turn the heat down and simmer for a further 2 minutes (keep stirring). To prevent the pudding from sticking and so that we can cut it into cubes later, moisten an ovenproof dish with approx. 1 tbsp of water. Pour the hot pudding into the dish and leave to cool completely. Place in the fridge and wait at least 3 hours. You can also leave the syrup to cool in the fridge.
Now cut the pudding into cubes and place in small bowls or tall glasses. Spread the syrup on top and decorate with dried fruit, for example. Alternatively, you can also use a scoop of ice cream, crushed ice cubes, fresh fruit, berries or nuts. Let your creativity run wild.
