Olive Bread

Homemade olive bread with a Mediterranean topping.
Ingredients
1 | fresh yeast cubes |
1 tbspn. | sugar |
1kg | flour |
2 tbspn. | salt |
4 tbspn. | olive oil |
400ml | water |
1-2 tbspn. | paprika and tomato paste |
1 cup | marinated green olives |
1 cup | grilled green olives |
1-2 tbspn. | pomegranate syrup |
Preparation

Mix the yeast cube with a glass of lukewarm water and sugar in a small bowl.

Mix the flour and salt in a large mixing bowl. Add the yeast liquid, olive oil and a little lukewarm water. Knead the dough so that it is not too sticky but also not too dry.

Cover the dough and place it in a warm place for an hour so that it can rise.

Preheat the oven to 200°C top/bottom heat and then bake the bread, e.g. in a cast iron pan, for approx. 30 minutes until the bread has turned a golden yellow color.

Leave the bread to cool. Then cut it into slices and spread some of the YAYLA paprika & tomato puree on the bread. Then spread the olives on the bread and drizzle with a little pomegranate syrup.
