Stuffed Sesame Pastries

The dough, coated with toasted sesame seeds, is fluffy on the outside and filled with a savory mix of Sucuk and Gouda on the inside. Perfect as a snack, side dish, or finger food for a picnic.
Ingredients
190 ml | oil |
200 ml | water (room-temperature) |
200 ml | milk (room-temperature) |
2 | egg white |
1 tbsp | sugar |
20 g | fresh yeast |
1 tbsp | salt |
850 g | flour |
100 ml | water |
3 tbsp | grape molasse |
300 g | sesam (roasted) |
250 g | sucuk |
250 g | grated gouda |
Preparation
Mix water, milk, yeast, and sugar in a large bowl. Add the egg white, oil, flour, and salt, and knead for at least 8 minutes. The dough will still be a bit sticky. Just spread a little oil on your hands and shape the dough into a ball. Cover the dough and let it rise for about an hour.
Fry the sesame seeds in a pan and fill them in a deep plate. Mix grape molasses and water together. Dice the sucuk and mix it with the grated cheese.
After the rising time, form 10-15 balls from the dough, flatten them with your hands, and fill them with the sucuk-cheese mixture. Seal the opening and shape them back into balls. First, dip the dough balls into the diluted grape molasses, then roll them in sesame seeds. Place them on a baking sheet and make 2-3 diagonal cuts on the top. Now cover the dough balls and let them rest for 30 minutes.
Place the baking sheet in the preheated oven and bake at 180°C (350°F) with top/bottom heat for about 20 minutes, until the dough is golden brown.
