Sucuk is the classic among Turkish sausages. So why not try a burger with the flavorful garlic sausage for a change? Ingredients

4wafer-thin slices of Pastirma (air-dried cured beef with spicy edge)
4 Sucuk patties (air-dried and strongly seasoned raw sausage made of beef)
4 burger buns
4 eggs
4 slices of Kaşar cheese (mild, semi-hard cheese made of cow’s milk) some chopped parsley
1 pinch of salt
1 pinch of pepper
1 pinch of chilli flakes (pul biber)
some chopped parsley
some Salça (mild tomato puree or red pepper paste) or Acuka paste (Red pepper and walnut paste)

Preparation

Place Pastirma in a frying pan, cover with baking paper and lay a pan on top to weigh it down. Fry over a low heat for 4-5 minutes until crispy. Place on a paper towel and allow to cool. Place 4 serving rings (about 8-10 cm diameter) in a pan (or a smooth griddle) and warm gently.

Break an egg into each serving ring and leave to become firm for a few minutes. Then depending on how you want it, carefully loosen the serving ring and season with salt, pepper and chilli flakes.

Grill Sucuk patties in a grooved griddle (or on the barbecue) for about 2 minutes on both sides. In the meantime, warm the halved burger buns for 2-3 minutes. On the bottom burger bun, first lay a slice of cheese then the Sucuk patty, an egg, a crispy slice of Pastirma (can be crumbled if you like) and some parsley if desired. Spread some Salça on the top burger bun and place on top of the bottom burger bun. Serve immediately.

Tip:

Tomato slices, lettuce leaves or other ingredients are optional and can be added if desired.Fans of vegetarian cuisine can replace the Sucuk patty with our aromatic Kashkaval barbecue cheese.
