Vegan Sucuk with Egg

What would a Turkish Sunday breakfast be without sucuk and eggs, right? Of course, we also think of our vegan friends, as with our vegan sucuk you can now prepare this classic too. Just add tofu and the right spices, and voilà, you have the authentic taste on your plate.
Ingredients
100g | vegan sucuk |
200g | plain tofu |
sth. | salt, pepper, kala namak |
1 | red paprika |
2 handful | cherry tomatos |
3 sticks | spring onions |
3-4 tbsp | plant-based yogurt |
2 tbsp | soy sauce (optional) |
Preparation

Press the tofu, crumble it, and set it aside. Chop the bell peppers, tomatoes, and spring onions, and set them aside as well.

Slice the sucuk and roast it in oil or butter. Take the sucuk out from the pan and stir-fry the bell peppers and tofu in the same pan. Once the tofu is golden brown, season it and deglaze with soy sauce.

Add the tomatoes, spring onions, and yogurt.

Finally, add the sucuk and serve.
