Preparation
For the dough, mix the water, yeast and sugar. Add the flour, egg yolk, oil and salt and work into a dough. Cover the dough and leave to rise for 1 hour.
Finely chop the onion and garlic for the filling. Fry the mince in a pan. Add the oil, garlic and onion and fry. Season with pepper, salt and paprika powder.
Preheat the oven to 190 °C top/bottom heat. Grease a springform tin (Ø 24 cm). Roll out 2/3 of the pastry and place in the springform tin. Raise the edges by approx. 2-2.5 cm.
Spread the minced meat, ketchup, mustard in small pieces, gherkin slices and cheese in the tin one after the other. Roll out the remaining pastry until smooth and place on top of the filling as a lid. Press the lid and edges down firmly.
Finally, brush the top with the egg yolk and sprinkle with the sesame seeds. Place everything in the hot oven for approx. 25-30 minutes (the time may vary depending on the oven).
Cut the oven burger into pieces and serve with green olives and fresh parsley.
