Chicken Breast Fillet with Bulgur Side Dish

A juicy marinated chicken breast fillet with a delicious bulgur side dish.
Ingredients
2 | Chicken breast fillets |
2 | teaspoon paprika paste, mild or hot |
sth. | salt, pepper, oregano |
1 | garlic clove |
4 tbspn. | olive oil |
180g | bulgur |
300ml | water |
50g | peas |
1 | leek stick |
1/2 | red paprika |
1/2 | tomato |
1 | teaspoon butter |
sth. | green olives |
sth. | white cheese, 60% |
Preparation
Add the garlic, olive oil, salt, pepper, oregano, garlic and Yayla paprika pulp in a bowl and mix well. Place the chicken breast fillets in the bowl and rub well with the marinade. Marinate for approx. 2 hours. Better still, overnight!
Chop the onions, peppers and tomatoes. Heat 2-3 tbsp olive oil in a pan (high temperature). Gradually add the vegetables and season with salt and pepper. After 3 minutes, add the dry bulgur and fry in the pan for 30 seconds. Now add boiling water and simmer. Turn the temperature down to medium heat. Cook for approx. 13 minutes until the bulgur is cooked and the water has been absorbed. Add a little butter and set aside, covered.
Pour the oil from the chicken marinade into a pan. Remove some of the marinade from the chicken. Fry the chicken breast fillets on both sides until cooked through. Fry the first side for approx. 3-4 minutes and, after turning, for a further 4-5 minutes
Now we are ready to serve: place the bulgur garnish on a plate. Cut the chicken breast fillets into strips and place on top. Cut the white cheese into cubes and sprinkle over the chicken. Scatter over the green olives. Garnish with a little olive oil, pepper, chives and thyme and you're done!
