Omelette Wraps

Ingredients
1 | tortilla wrap |
1/8 | akkawi cheese |
1 tbsp | low-fat milk |
1/2 tbsp | butter |
2 | eggs |
sth. | arugula |
sth. | cherry tomatos |
sth. | red cabbage |
sth. | salt |
sth. | pepper |
sth. | chilli flakes |
Preparation

Grate the Akkawi cheese coarsely.

Whisk the eggs in a bowl with milk, salt, and pepper.

Melt the butter in a non-stick pan. Add the whisked eggs and spread them in the pan like a classic omelette, cooking slowly. Add chili flakes. Sprinkle the grated Akkawi cheese on top and let it sit for a bit.

Now take a tortilla wrap and place it over the omelette. Loosen the edges of the omelette and flip it so that the tortilla wrap covers the bottom of the pan. Let it cook for a bit and then remove it from the pan.

Fill the wrap as desired; arugula, tomatoes, and red cabbage will add a special freshness and crunch. Add a bit more cheese, roll it up, cut it if desired, and serve.
